Super Green Grilled Cheese Sandwiches

Happy St. Patty’s Day!

I’m still in Florida, soaking up my last few days of vacation, trying not to concern myself with the goings-on of the world. And because of that, I’m going to make this post short and sweet.

But in honor of SPD I felt compelled to share a recipe that’s a least a little bit festive. Artificial food colorants are just not my thing, so instead of a bright green cake or sprinkles, I used natural and healthy green ingredients to make my nutritious and wholesome Go Green Grilled Cheese.

This super flavorful grilled cheese starts with a white bean spread made with fresh basil, garlic, scallions and walnuts. The bean spread is topped with ripe avocado slices, fresh spinach and Swiss cheese. Then, the whole sandwich is grilled to perfection, served hot and melty. Doesn’t that sound amazing?? Well, it is. And you know what would go perfectly with this sandwich today? A crisp and refreshing Guiness Blond Ale and some all-natural potato chips (look for the ones with only potatoes, heart-healthy oil and salt in the ingredients list). Now that’s a meal worth celebrating!

Super Green Grilled Cheese Sandwiches
Serves:  Start to Finish: 25 minutes

Ingredients

1 can Organic White Beans
1/3 cup Basil Leaves (about 10 leaves)
2 cloves Garlic, peeled and roughly chopped
2 Scallions, chopped
2 tablespoons chopped Walnuts
1 tablespoon fresh Lemon Juice
1 teaspoon Olive Oil
Salt
Pepper
1 ripe Avocado, peeled and thinly sliced
8 thin slices all natural Swiss Cheese, (.5 ounces per slice)
Fresh Baby Spinach Leaves
8 slices whole grain Sandwich Bread (I used Ezekiel Sesame Bread)
Butter or Oil, for grilling

To Make

First, make the Basil Bean Spread. In a food processor, process all ingredients, beans through lemon juice, until smooth. Season with salt and pepper to taste.

Assemble sandwiches. Divide bean spread and slather evenly onto 4 slices of bread. Top each with 1/4 avocado. Season with salt. Top each with 1 thin slice cheese. Top cheese with a single layer of fresh spinach and then another slice of cheese. Top each stack with another slice of bread. Lightly butter or oil the top of each sandwich.

Heat large skillet over medium-low heat. Place sandwiches butter/oil side down. Cover with lid. Cook until golden brown (about 5 minutes, but watch closely). Butter or oil the bread slice facing up and flip. Re-cover and heat second side until golden brown and cheese is melty. Serve immediately.
