Lentil & Vegetable Soup is a true classic. I have several lentil soup varieties in my recipe box, and this nutrition-packed italian version is a go-to for me because it’s quick & easy to make. Filled with lentils, vegetables, tomatoes, dried herbs and my secret weapon ingredient, it’s clean, simple and straight forward yet super… Continue reading Italian Lentil & Vegetable Soup
Growing up in St. Louis, Bread Co was a staple for as long as I can remember. If you’re not familiar with Bread Co, you maybe know it as either Saint Louis Bread Company, or more likely, Panera. Yes, Panera is a St. Louis original, and the same exact fast-casual restaurant goes by a different… Continue reading Vegetarian Broccoli Cheddar Soup
Three soup posts in a row!? It’s that time of year I guess. Plus, I freaking love making soups and stews. So yes, three soup posts in a row. This soup recipe for Black Bean Tortilla Soup is one that I’ve cooked for clients a number of times. I love it so much, that I… Continue reading Vegetarian Tortilla Soup with Black Beans

Whenever I feel like I’ve been eating too many sweet treats or overindulging in general, a… Continue reading Curried Cauliflower & Chickpea Stew
Today’s post is a veganized recipe of the white chicken chili I made for a client this week. I loved the creaminess and richness of this hearty chicken chili combined with the sweet crunch of the fresh corn kernels. All I needed to do was omit the chicken. I then decided to take it even further and omit the cream as well (aka veganize it).
It’s soup season and I’m pretty excited about it, for more reasons than one. First and foremost is that soups automatically evoke feelings of warmth, coziness and comfort. I think most people can agree that soups and stews are one of the highlights of the cold weather seasons. Additionally, soups are fun to make because… Continue reading Vegan Curried Lentil Soup with Citrus Brown Rice
It’s April. Not a month typically viewed as stick-to-your-bones-soup-worthy. But I am once again reminded that my black and white vision of what the weather should look like during each month is totally irrelevant. Mother Nature does what she wants, and although she had the whole month of March to transition to true Spring, it’s… Continue reading Vegan ‘Shroom & Barley Soup
