1. Hummus Bowls with Cumin-Roasted Tofu
I’m on a hummus bowls kick and this is pretty much as classic as it gets. My most basic hummus recipe topped with crispy, chewy tofu and fresh Mediterranean salad.

2. Creamy Tomato Soup with Grilled Cheese Sandwiches
Make this soup on meal prep day and whip up some quick grilled cheeses when ready to serve. Can you think of a more comforting combo? I like Field Roast brand Chao slices if you’re going for a vegan sandwich. Use olive oil or Earth Balance for griddling. If you’re feeling up to it, add avocado slices, roasted mushrooms and/or grilled onions to the sandwiches.
