Attention, Food Vibers! I’m starting a new project and I’m calling it, Project: Grain Bowl. My favorite type of meal is the new age version of a “big salad” (Seinfeld reference) – a fully loaded grain bowl. I eat at least one a day, and I regularly make them for clients, making me a grain bowl pro. Side note: grain bowls are also referred to as Buddha Bowls and Nourish Bowls.
One of my favorite dishes to make for myself and for clients, this Sun Dried Tomato & White Bean Salad is perfect stashed in the fridge for healthful & nourishing lunches & dinners all week…it’s one of those “longer it sits, better it gets” situations. This bean salad is also incredibly easy to make, as well as naturally vegan and gluten-free (meaning that I didn’t necessarily intend for it to be, it just turned out that way).

Today’s post is a veganized recipe of the white chicken chili I made for a client this week. I loved the creaminess and richness of this hearty chicken chili combined with the sweet crunch of the fresh corn kernels. All I needed to do was omit the chicken. I then decided to take it even further and omit the cream as well (aka veganize it).
