
I love green beans, they’re one of my fave vegetables, and this is a fave way to eat them. Lightly roasted and tossed with a lemony dressing, finished with toasted almonds.


Pair these beans with a portobello or veggie burger for an easy weeknight dinner, or make a meal of all sides with this as one of three veggies piled into a bowl (my favorite way to eat). These green beans also make the perfect summer side that every eater will love, so bring them over to the next BBQ gathering.
Lemony Green Beans with Toasted Almonds
serves 4-6
Ingredients
2 lbs trimmed green beans, cut into 1-2″ pieces
olive oil
sea salt, fine grain
zest of 1 lemon
1/4 cup fresh lemon juice, reserve some for garnish if desired
1 small shallot, roughly chopped
2 teaspoons honey
1/2 cup slivered almonds, toasted, reserve some for garnish, if desired
To Make
Preheat oven to 425 degrees. Toss green beans in 1 teaspoon olive oil and 1/2 teaspoon salt. Transfer to a large rimmed baking sheet, lined with foil. Slight overlapping is fine. Roast for 10 minutes, allow to cool, transfer to mixing bowl.
Blend 3 tablespoons olive oil, zest, lemon juice, 1/2 teaspoon salt, shallot and honey until super smooth. Pour over green beans and mix to combine. Season with salt and pepper. Add toasted almonds.
Garnish with lemon zest and more almonds.
