The secret to the best plant-based meals is really flavorful sauces. Having a good sauce or two on hand also makes eating plant-based simpler – just add it to your easy-prep grains, legumes and veggies for a flavor-packed meal with minimal effort. For this smoky, spicy sauce I use cashews for creaminess and jarred roasted peppers for flavor and color. Chipotle powder, a pantry staple, adds heat and smokiness, along with the smoked paprika. I love this sauce for my breakfast burritos and for taco night. If you love burrito bowls, this is a great dressing option.

Creamy Chipotle Aioli-Style Sauce
Ingredients
2/3 cup raw cashews*
2 large roasted red peppers from a jar (use up to 4 if the peppers are smaller)
1/2 cup water*
1 teaspoon granulated garlic or garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon chipotle powder, for mild spice*
1/2 to 3/4 teaspoon sea salt, fine grain (to taste)
To Make
Blend ingredients together in a high-powered blender until super smooth. Add salt and chipotle powder to taste.
Notes
– I don’t soak cashews because my blender is powerful enough where it’s not needed, best practice is to soak but not required
– I like using boiled water for longer shelf life but it’s not required and I sometimes don’t bother
– You can use more chipotle powder in 1/8 to 1/4 teaspoon increments but beware chipotle powder packs a serious punch
