If you read my last post, you’d know that I’m on a mission to get everyone on board the nourish-bowl-train. Nourish bowls are essentially a combination of flavors, textures and nutrients focusing on nourishing, plant-based ingredients. My last post featured a quick and simple savory quinoa pilaf, one of my favorite starts to any nourish… Continue reading Quinoa Nourish Bowls with Roasted Cherry Tomato Sauce & Seared Halloumi
Lentil & Vegetable Soup is a true classic. I have several lentil soup varieties in my recipe box, and this nutrition-packed italian version is a go-to for me because it’s quick & easy to make. Filled with lentils, vegetables, tomatoes, dried herbs and my secret weapon ingredient, it’s clean, simple and straight forward yet super… Continue reading Italian Lentil & Vegetable Soup
One of my favorite dishes to make for myself and for clients, this Sun Dried Tomato & White Bean Salad is perfect stashed in the fridge for healthful & nourishing lunches & dinners all week…it’s one of those “longer it sits, better it gets” situations. This bean salad is also incredibly easy to make, as well as naturally vegan and gluten-free (meaning that I didn’t necessarily intend for it to be, it just turned out that way).
Attention, friends! I think this is my favorite soup recipe ever. So simple, so healthful and so tasty. I make loads of soups and stews, and I obviously try to make each of them amazing. But this one, it’s just so so sooooo good. Hard to believe too, because the ingredient list is short and… Continue reading White Bean Stew with Rosemary
I consider myself a very healthy person. But that’s not because I eat “healthy” 100% of the time. I consider myself healthy because I balance out big portions and ultra-rich foods with smaller meals and lots of plant-based eating. Whenever I feel like I’ve been eating too many sweet treats or overindulging in general, a… Continue reading Curried Cauliflower & Chickpea Stew
Homemade veggie burgers are the perfect way to make everyone happy. My black bean burgers are hearty enough for meat-eaters, delish enough for foodies and fit perfectly into a health nut’s diet regimen. These zesty burgers are packed with plant-based protein, fiber and flavor. Additionally, because I use arrow root powder and almond flour as… Continue reading Mexican-Spiced Black Bean Burgers (vegan | gluten-free)
Yep, this my third grain bowl post this month. Why? Two reasons. First is because I love nourishing bowls of goodness, packed with an array of nutrients, flavors and textures. It’s my favorite way to eat because it’s healthy, convenient, packable, stores well in the fridge and, most importantly, absolutely delish. If you want to… Continue reading Summer Veggie Grain Bowls with Classic Lemon Hummus
In my opinion, the best way to cleanse and detox the body is with plant-based (vegan) meals filled to the brim with fresh produce, whole grains, fiber and protein. This quinoa salad fits the bill, not to mention being outrageously delicious. The layers of flavors and textures in this salad will leave feeling full, satisfied and healthy.
Life is all about finding balance. A balance between work and play. A balance between being active and being lazy. A balance between giving and taking. When it comes to food, your mentality should focus on balance too. This could mean something different for every person. But for me, it’s a balance between pleasing my… Continue reading Red Pepper Hummus & Roasted Cauliflower Dipper Bowls
It’s soup season and I’m pretty excited about it, for more reasons than one. First and foremost is that soups automatically evoke feelings of warmth, coziness and comfort. I think most people can agree that soups and stews are one of the highlights of the cold weather seasons. Additionally, soups are fun to make because… Continue reading Vegan Curried Lentil Soup with Citrus Brown Rice
